Step 1

Start by placing the gelatin into the bowl of a standing mixer. To that, add 1/2 cup of ice-cold water. Connect the whisk attachment and proceed to step 2.

Step 2

Get a small saucepan with the remaining 1/2 cup of water, and to it, add corn syrup, granulated sugar, and salt. Set the pan on the stove set to medium heat and cook the mixture for the next 3 to 4 minutes. Make sure the pan is covered while cooking.

After the time has passed, take the cover off and use a candy thermometer. Then, cook everything once again until it reaches 240 degrees F. Once the temperature rises, take the pan off the heat.

Step 3

It’s time to use the mixer. Make sure it’s on low speed before pouring the sugar syrup down the side of the bowl. Once you do that, increase the speed.

Keep whisking until the mixture reaches a very thick state. Around 12 to 15 minutes usually does the trick. You can add the vanilla during the last minute of whipping. While you wait for everything to be edible, you can prepare the pans.

Step 4

Firstly, combine the cornstarch with the confectioners’ sugar in a small bowl. Find a 13 by 9-inch baking pan and lightly cover it with nonstick spray. Pour the sugar-cornstarch mixture into the pan and spread it to cover the entire bottom and the sides.

Whatever’s left will be used later.

Step 5

Once the pan is prepared, you can pour the mixture inside using a lightly oiled spatula. Once everything is even, dust the top with some of the sugar mix left from the previous step. Now, it’s time to let your homemade marshmallows rest.

Give them at least 4 hours, but leaving them overnight is the best option if it’s possible.

Step 6

Now, you can take the marshmallows out onto a cutting board. Cutting into 1-inch squares is the size most folks will be comfortable with. So, take out the pizza wheel, dust it with the confectioners’ sugar mix, and cut.

Use the remaining mix to dust the marshmallow sides.
