Christmas Cake Recipe

The Cake

  • 9 oz Butter
  • 10 oz Plain flour
  • 6 oz Raisins
  • 5 oz Brandy
  • 1 lb 2 oz Currants
  • 12 oz glacé cherries
  • 12 oz Sultanas
  • 9 oz Dark muscovado sugar
  • Four eggs
  • Two oranges (zest only)
  • 3 oz Blanched almonds
  • 1 tbsp Black treacle
  • 1 1/2 tsp Mixed spice

The Covering

  • 8 oz Marzipan
  • 3 tbsp Apricot jam
  • Icing sugar

The Royal Icing

  • 1 1/2 lb Icing sugar
  • Three eggs
  • 1 1/2 tsp Glycerine
  • 3 tsp Lemon juice

Now that you have everything you need, you can start making Christmas cake. Follow our instructions, and you’ll surely get the tastiest results.

Step 1

Firstly, we’ll add the cherries and the dried fruit to a large mixing bowl. Pour the brandy over the fruit, add the orange zest and mix the ingredients. Cover the bowl with clingfilm and let the fruit soak for three days, making sure you stir the mix daily.

Step 2

Find a 9-inch deep round tin and grease and line it. Preheat the oven to 280 degrees F and proceed to the next step. 

Step 3

Add sugar, butter, treacle, eggs, and almonds into a large mixing bowl and turn on the appliance. Once the ingredients have been beaten, add the flour and ground spice. Blend everything once again, then add the soaked fruit. Now, you can move the mix into the prepared cake tin.

Step 4

You’ll need to bake the cake for the next four hours. After two hours have passed, cover the tin with foil. And to check if the baking has finished, use the toothpick method. Once it comes out clean, take the cake out of the oven.

Step 5

You can store this cake for up to three months. Just make sure you add more brandy into the mix. A week before the big day, you can start covering the cake.

Step 6

To start the covering, brush the sides of the cake with warm apricot jam. Then, prepare the marzipan; once you have the correct dimensions, add it to your cake and let it dry. It will need a few days.

Step 7

Whisking the egg whites is the first step in making the icing for this cake. Once they become frothy, add the icing sugar periodically. Then, add the lemon juice and, finally, the glycerine. 

Step 8

Finally, you get to spread the icing and finish making Christmas cake. Use a palette knife to make the presentation as impressive as possible, then let the cake chill overnight.
